- Baja Fish Tacos- I didn't make this exact recipe, but this week I used it as inspiration for some Mahi Mahi tacos. I cut out the sour cream and avocado to save calories (and honestly, avocado prices have been ridiculously high the last few months), and just did simple corn tortillas with about 1/10 lb. fish, 1 tbsp salsa, cilantro, lime, pepper, and loads of lettuce, cabbage and tomato (coming out to approx 105-110 calories) per taco. Delish!
- Shrimp & Mango Summer Rolls- I cannot wait to prepare these on a date night for my fiance and me! Spring rolls are usually quite light, yummy and healthy-- as long as you watch how much you're dipping into that peanut sauce!
- Low-Fat Guacamole- I never would've thought to use peas to save calories! Another must-try!
- Cauliflower Fritters- Everything in this blog sounds uncomplicated and delicious! :)
